School Lunches..I’ve been at it for a few years now and it sucks folks, I get it! I don’t judge you for secretly kind of resenting your child for requiring 3 meals a day! It’s something about school lunches that particularly turn children half demonic. Not anymore! This delicious flatbread recipe will calm your child’s angry in a hurry!
Of course, you understand, no one wants to eat a sandwich every single day for lunch and nor do you want to be in the routine of making one every day! With all the food allergies out there, feeding your children is getting harder and harder! We’ve tried it all and nothing speaks to Ava more than my homemade flatbread!
It’s so incredibly easy to make and she’ll even let me put spinach on it!! Yup that’s right, the big green leaf that most kids hate, as long as I keep the flatbread coming, she’ll eat spinach. #momwin
It boggled my mind that Ava would eat Subway flatbread sandwiches but turned her nose up at almost anything I would send to school with her. Turns out, she just really liked the Flatbread! I began making my own at home and now school lunches are something Ava enjoys!
Ready to make your own delicious flatbread? Let’s get cooking!
- 1 cup Very Warm Water
- 2-2 1/2 cups All-Purpose Flour
- 1 teaspoon Quick Rise Yeast
- 1 tablespoon Olive Oil
- 1 teaspoon Sea Salt
If you have a stand mixer, use the bowl of your mixer with the dough hook attached. Mix together all the listed ingredients. Knead the dough for 5 minutes in the machine or 8-10 minutes by hand.
Place the dough in a lightly oiled bowl and cover tightly with plastic wrap. Let the dough rise until doubled which is about one hour. Divide the dough into 8 pieces and cover them with plastic wrap and let rest for 10 minutes. Roll out the pieces of dough into 6-8 inch circles. Dry fry them on a hot frying pan 2-3 minutes per side, or until they are puffed a bit with some browned spots. If they are taking longer to cook, increase your heat so that they don’t dry out.
Stack the cooked flatbread on a wire rack to cool down and then store in a plastic bag after they have cooled.
