I always find these cocktail recipes for Simple Syrup but who actually carries simple syrup at home? Not I… until I became frustrated with trying to find simple syrup! Like all other things in my life, there are no problems, only solutions. If you cannot find it, make it yourself. So with some left over peaches from our trip through the Okanagan on our way home from SK, I made myself a Simple Syrup from Peaches.
As I was making this, my husband and 8 year old kept asking me what it was and what I was using it for! Simple syrup is basically is a liquefied form of sugar. Simple Syrup can be used to sweeten cocktails, iced tea, iced coffee and other cold drinks. Liquid sweetener is much easier to blend into cold beverages than regular sugar.
What other things can you use this syrup for? Simple syrup can also be used to sweeten your fruits and baked goods. Drizzle it over desserts or even use it as a glaze. This recipe turned out a bit more liquidy than syrup but it’s worked the same!
For this recipe you will need:
2 cups water
1 1/2 cups sugar
1 ripe peach
Pinch of salt
How to make it:
1) Cut peach into slices and place in a medium pot with water, sugar, and a small pinch of salt. Heat over medium-low heat until sugar is dissolved. Remove from heat and let cool. Remove peel from peaches.
2) Once the mixture is cool, add to a blender and blend until smooth. Peach cocktail syrup will keep great in the fridge for up to two weeks.
You can also use this recipe and replace peaches with another one of your favourite fruits! Maybe next time try it with Lavender or Mint? Send us your different combinations!
